Here is a quick and easy tomato soup that you can make from pantry stock. It is warm and satisfying and paired with a grilled cheese sandwich will take anyone right back to their mom's kitchen table! This recipe uses pantry stock, not fresh tomatoes for a super fast version of a classic favorite. This soup is so much better than condensed soup from a can, which, in my opinion often most tastes like the can. This does not. With only a handful of ingredients you can make this soup super fast and get it on the table into hungry bellies. A couple of large cans of crushed or ground tomatoes or whatever you have on hand. Diced tomatoes will work here if that is all you have just hit it with the immersion blender or run it through your regular blender if you want a smooth soup. If you like it chunky, leave it as is. No harm, no foul! I added a quart of chicken stock and a cup of cream along with a handful of dried spices from the pantry. My selection here was onion powder, garlic powder, basil and Italian seasoning. You use what you love. Throw it all in a pot and bring it to a simmer and voila', homemade tomato soup in the same amount of time as it would have taken to open a can and add water or milk. This soup is creamy and delicious and perfect on a cold winter night or just about anytime. What is it about tomato soup? Nothing can take me back to my childhood quicker than a bowl of this delicious concoction paired with a grilled cheese sandwich to dip into it. On this night we chose to have spam burgers along with our soup. Something that we don't have too often, but again, it came from the pantry, so this is just another example of how easy it is to cook a delicious and satisfying meal for your family with only what you may have in the pantry. We had some burger buns for this night, but often have spam on plain sandwich bread. Homemade is great but whatever we have on hand is what we will go with. My secret to great spam is to cook it in the oven on a sheet pan. I like my slices to be crispy and cooking them in the oven is the best way to achieve this. It renders out all the fat and prevents the slices from burning like they can on the stovetop in a skillet. The come out completely dry with a bit of crispiness on the outside, making them perfect for sandwiches or even serving alongside your morning eggs and toast.
