Marshmallow Caramel Popcorn 9-10 cups plain popcorn (popped) - see note below ½ cup butter 1 cup packed light brown sugar 1 tablespoon light corn syrup 3 cups mini marshmallows or 20 large marshmallows. Sea Salt (optional) Pop popcorn and place in a large bowl, removing any un-popped kernels. NOTE: using a brown paper sack, add 5 tablespoons of your own kernels, or pop 1 bag of plain microwave popcorn. 1-(3.2-ounce) bag of plain microwave popcorn. This should yield 9-10 cups of popcorn. Melt butter in a medium saucepan over medium heat. Add brown sugar and corn syrup and cook, stirring, until well blended. Add marshmallows and stir continuously until all melted and the mixture is smooth. Pour mixture over popcorn and mix well. Spread popcorn out on parchment paper or a greased baking sheet, sprinkle with sea salt, and let sit for about 10 minutes to set up. Store in an airtight container in the refrigerator. Enjoy!
