Mediterranean Style Roasted Vegetables Couscous inspired by my granny's recipes. I have used Couscous instead of serving my vegetables with flat bread. This healthy dish, is full of nutrients and perfect for people following a vegan diet. I havee used may different vegetables to give the dish different nutrient contents and some colour, so you can say, a colourful couscous dish ;) Vegetables used are courgettes, aubergines, onions and peppers, adding to them some herbs and seasoning to give the best flavour as well as having a healthy balanced dish. I hope you enjoy making this dish!
