Lactose-free Guava Tarts Recipe Ingredients: For the crust: 6 Tbsp butter, softened at room temp 1/4 cup granulated sugar 2 egg yolks 1/2 tsp almond extract 1/2 tsp vanilla extract 2-3 Tbsp ice water 2 cups flour One bag of dry, raw beans (to weigh down tart shells while baking) For the filling: 1/2 cup sugar 3 egg yolks 2 1/2 cups LACTAID® Whole Milk 1 tsp vanilla extract 1 package or can guava paste, sliced 1/4" thick and cut with small (1") cutters, if desired Directions for making lactose-free Guava Tarts: For the crust: In a food processor, combine the butter and sugar until creamy, add the egg yolks, extracts and ice water. Add the flour and pulse just until dough comes together. Wrap in plastic wrap and place in freezer for 15 minutes. Preheat oven to 375 °F. Roll out the dough to 1/4" thick and cut out circles using a 3" circular cookie cutter. Place each circle of dough into a portion of a greased, nonstick standard size muffin tin, and gently press down using a small portion of dough wrapped in plastic wrap. Place a silicon muffin liner on top of each shell, and fill partially with beans. You can also use parchment paper. Bake for 10-12 minutes, remove beans and liner and bake 1-2 more minutes. For the filling: (Filling can be made while shells chill/bake) Using a mixer, beat sugar and egg yolks until creamy. Heat the milk and vanilla in a medium saucepan over medium heat until just below simmering, stirring to prevent scorching. Slowly add the hot milk to eggs, with the mixer on low. Strain over a fine mesh strainer to remove and lumps. Spoon a portion of custard into each tart shell, and place a guava cut out in center of each. Careful not to let any custard spill into muffin tin, or the shells will stick. Remaining custard can be baked in a casserole dish or ramekin. Bake at 350 °F for 15-20 minutes.
