Prep: 5 mins Cook: 10 minutes Total: 15 minutes Ingredients: olive oil 2 garlic cloves, peeled and crushed a handful of wild mushrooms 50 ml Madeira wine 100 ml double cream 1 Tbsp sun dried tomato pesto 1 Tbsp truffle salsa a handful of spinach 1 Tbsp parmesan 1/2 lemon 100 g gnocchi Step 1: Cook The Mushrooms Heat a little olive oil in a pan, then add the crushed garlics and the wild mushrooms, and season with salt and pepper. When the mushrooms start to go brown, add the Madeira and allow it to reduce down. Step 2: Make The Sauce Add the double cream the mushrooms and bring it up to the boil. Add the pesto and the truffle salsa and give it a good stir. Next add the spinach and the parmesan and mix again until the spinach wilts, then remove from the heat and mix in the juice of half a lemon. Step 3: Cook The Gnocchi Add a little olive oil to a hot pan and fry your gnocchi for a couple of minutes until they go golden brown. Once cooked, add the gnocchi to the sauce, bring it back up to the boil and serve.
