CRUMBCAKE 350 deg. 13x9 greased and floured pan CRUMBS 1/4 lb. butter (1 stick) 1 1/4 cup flour 3/4 cup sugar 1 Tbs. cinnamon Mix flour,sugar and cinnamon together.Add melted butter and mix with fork. Place in freezer while making cake batter. CAKE 1/2 cup solid shortening (likeCrisco) 1 cup sugar 2 eggs 1 tsp. vanilla 2 cups flour 2 tsps. baking powder 1 tsp. salt 1 cup milk Cream sugar and shortening,add eggs one at a time. Add vanilla.In a separate bowl mix the dry ingredients together.Beat into the creamed mixture starting with the dry ingredients add alternately with the milk. Don't overbeat. Place batter in greased and floured pan. Remove crumb mixture from freezer and with a fork and your hands,form into crumbs. Distribute crumbs over batter. Bake at 350 for 35-40 min, Test for doneness. TOPPING 10x (frosting/powdered)sugar Sprinkle over cake Cake can be cut and served directly from pan at either room temp. or warm.I think chilling the crumb mixture makes for a less crunchy topping My other crumb coffee cake recipe definitely is crunchier.
