In this video I’m sharing an easy lemon crumb bars recipe. Due to the unforgettable flavor of lemon filling and shortbread crumbs on base and top, it’s become one of my favorite lemon recipes. 🛒What you need: For filling: lemons - 6 medium pcs sugar - 250 g (or to taste) cornstarch - 30 g For crumbs: all-purpose flour - +/-400 g baking powder - 10 g salt - a pinch granulated sugar - 120 g vanilla sugar - 8 g zest of 6 medium lemons unsalted butter (softened) - 180 g 2 medium sized eggs A 12x8-inch baking pan 📝How to make: ▪️ Preheat the oven up to 180°C ▪️ Zest the lemons, mix the zest with the sugar and set aside Ho to make the filling: ▪️ Peel and deseed the lemons ▪️ Puree the lemons in a food processor or blender ▪️ Transfer the puree to a pot ▪️ Add sugar and cornstarch. Mix well ▪️ Over medium heat bring to a boil and cook for another 1 minute until thickened stirring constantly ▪️ Let it cool a little bit How to make the shortbread gough: ▪️ Mix together dry ingredients: sifted flour, baking powder, salt, vanilla sugar and sugar+zest ▪️ Add softened butter and rub with a fork, then with fingers until crumbs ▪️ Add the eggs and rub until crumbs ▪️ Spread 1/2 of the crumbs in the baking pan and press it with your hands ▪️ Spread the lemon filling over the bottom crust into an even layer ▪️ Sprinkle the remaining crumbs over the top of the lemon layer ▪️ Bake for 45-50 minutes until golden brown ▪️ Let it cool before removing from the pan ▪️ Dust with powdered sugar and cut into bars ___________________________________________________ Thanks for watching!
