This classic and easy chicken stew recipe is a rich and hearty mix of tender chicken pieces and carrots. It’s all simmered in a rich tomato sauce until the chicken is tender and juicy. Ingredients: 1.5 kg (3 1/3 pounds) chicken cut into pieces 3 medium ripe tomatoes 100 ml (1/2 cup) olive oil 150 ml (2/3 cup) white wine 2 medium carrots 4 cloves of garlic 1 teaspoon nutmeg 1/2 teaspoon pepper 1 large onion 5 tablespoons tomato pulp Coriander (to taste) 1 teaspoon salt Directions: Step 1: In a large saucepan, pour the olive oil and the sliced onion. Sauté on a medium-low heat until the onion start to turn slightly golden, stirring occasionally. Step 2: Add the peeled tomato cut into small chunks, peeled carrot cut into small pieces and the chopped garlic. Stir and cook over low heat until the tomato start to break down, stirring occasionally. Step 3: Add the chicken and season with salt, pepper, nutmeg, tomato pulp and white wine.
