I find it useful to explore ideas over one chord at a time before trying chord pairs or more complex progressions. You can use this video to try ideas over an E7 chord. I hope you have fun jamming along to this single chord backing track! The E minor pentatonic scale over the E7 chord will give you a more dissonant and gritty sound. Though the minor 3rd (G) and Perfect 4th (A) clash with the Major 3rd (G#) of the chord, this is one of the most common scales played on the guitar. A common move is to bend or slide the G up a half step to G#. The E Major pentatonic will be a smoother friendlier sound. More consonant, less dissonant. It makes me think of The Allman Brothers Band. The E9 Arpeggio will be a jazzier sound. If you're looking to expand the pentatonic sound, or you feel like your solos sound like you're just walking up and down scales, "playing the changes" by mapping out chord tones and targeting them on strong beats will allow you to sound more purposeful.
