Zero waste with traditional Sri Lankan village life in season, this time passion. It is citrus season. So many citrus trees are in my home garden and farm. Passionfruit (Passiflora edulis) and mandarins (Citrus reticulata) tees were full of fruits. Passionfruit and mandarins are fully matured and well ripen and this is the correct time to pick them and eat. But the harvest is too much and there was a large excess. I had an idea to preserve the excess quantity. Passionfruit is sweet and nice but mandarins very sour. So difficult to eat directly. All these fruits are rich in Vitamin C and antioxidant. My children love to eat different kind of Jams. But I had a different idea this time. Normally, I made juices and ready to eat pickles, but high quantity got wasted as leftovers, because I did not use peel or seeds. Without wasting the peel and seeds which are high in different nutrients, I thought to made marmalade with zero waste. Due to the sour nature, children do not like to eat passion and mandarin directly. Even though they like to drink passion juice little, mandarin is not in their favorite food list. Since I aware of the health befits of these fruits specially these are best foods for skin, as well as for the immune system as immunity boosters, I did not want to waste even one fruit. In addition to that, this is the best time to eat natural immunity boosters. Therefore, I wanted to give them to my child in a tasty and yummy way to improve their skin and the immune system who are very much susceptible for skin damages and germs. Because of the addition of whole fruit, the prepared marmalades were rich in fibers. Natural organic fruits in my garden do not contain any harmful chemical. I used whole fruit, added only sugar to preserve it and to get the proper quality of marmalade and added pinch of salt to improve taste. Using direct fire, I cooked the fruits with juice and crushed peel and seeds and made syrups and boiled more to get semi solid texture. Then I packed these two marmalades in sterilized glass bottles for the future consumption of my family. Once I finished making the marmalades, my children were greedily waited to eat them by noticing the nice smell. They enjoyed lot these yummy sweet marmalades and I was able to add these two preparations to their favorite list without any difficulty. So, try it and make your table different, tasty and healthy with natural stuffs. Added two recipes to my plant based food category. Save your excess food for your future with zero waste. This is good as dessert, as ice cream and cake topping instead of using cherry. These are tasty with bread, roti, crackers and plain biscuits.
