Here is my baked Baileys Cheesecake just in time for the Holidays so that you can make and serve this wow cheesecake to your family and friends. You don't have to use Baileys, you can buy the cheaper Carolans or many other Irish creams and they will work just as well. Baileys Chessecake Serves 12 (makes two 8 inch pans) 3 cups graham crumbs/digestive biscuits 8 oz (2 sticks) unsalted butter 24 oz cream cheese (room temperature) 1 ¼ cups sugar 3 tsp cocoa 1 TBS cornstarch ¾ cup sour cream 3 eggs ½ cup Baileys 2 cups heavy cream, whipped stiff Line the bottom of two 8 inch springform pans with parchment paper. Preheat the oven to 350 degrees Fahrenheit. Melt the butter and mix into the crumbs. Spread evenly on the base of the spring form pans. Beat the cream cheese in a mixer until smooth. Add the sugar and mix, then add the eggs and sour cream. Scrape down the sides of the mixing bowl and add the cornstarch and cocoa and mix. Stir in the Baileys and beat until the mixture is smooth and all combined. Pour onto the cheesecakes base and bake 350 degrees for about 35 minutes. Turn the temperature down to 325 degrees and bake a further 10 minutes. Turn off the oven, open the oven door and allow the cheesecakes to cool for about an hour. Refrigerate overnight to set completely. Unmold the cheesecakes and place on serving platters. Top with whipped cream and chocolate and serve. www.theroyalchef.com
