Written recipe - Meethi Chutney Prep time: 10 minutes (30 minutes soaking time) Cooking time: 45-50 minutes Ingredients: TAMARIND | इमली 75 GRAMS (DESEEDED) DATES | खजूर 250 GRAMS (DESEEDED) HOT WATER | गरम पानी AS REQUIRED JAGGERY | गुड़ 750 GRAMS (CHOPPED) GINGER POWDER | सोंठ पाउडर 1 TSP BLACK PEPPER POWDER | काली मिर्च पाउडर 1/4 TSP ROASTED CUMIN POWDER | भुना जीरा पाउडर 1 TBSP BLACK SALT | काला नमक 1 TSP KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च 1 TBSP SALT | नमक 1 TSP WATER | पानी 1 LITRE Method: Add seedless dates & seedless tamarind to a bowl. Pour enough hot water to fully submerge them, cover & let them soak for 30 minutes so they soften up. Once soaked, transfer them to a mixer grinder & blend into a smooth, lump-free paste, you can add more water if required. Strain the paste using a sieve into a heavy-bottomed stock pot to remove any fibrous bits from the tamarind, nothing else will be collected in the sieve. Add all the remaining chutney ingredients to the pot, including jaggery & spices & turn the flame to high. Stir continuously until the jaggery melts completely. Once the mixture comes to a boil, reduce the heat to medium & let is simmer. Remove the scum that will start to float on the surface. Keep cooking while stirring at regular intervals. Let it simmer for about 30-40 minutes. The chutney will get darker & thicker as it cooks & reduces. After about 30 minutes of cooking, it will get thick enough to coat & glaze the back of the spoon. You can stop cooking the chutney at this stage if you like it a bit runny but still slightly thick. It will also thicken up slightly once it cools down. I like the chutney to be slightly thicken, a proper glazing & coating consistency so I cook it for 10 more minutes, total simmering time of 40 minutes. Turn off the heat & let the chutney cool completely. It will continue to thicken as it cools to a perfect chutney consistency that I prefer & is perfect for all types of dishes. Your meethi chutney is ready!
