Fluffy Whole Grain Pancakes Serves 2 Ingredients – Pancakes • 1 large very ripe banana (brown and spotty) • 1 cup rolled oats • ½ tsp cinnamon (optional) • 1 cup unsweetened non-dairy milk • 1 tsp vanilla extract • 1 tsp baking powder • 1 tbsp apple cider vinegar • Pinch of salt For Serving (optional) • Blueberry compote • Sliced bananas, strawberries, or raspberries Instructions Combine all pancake ingredients in a high-powered blender and blend until smooth. Let the batter rest for 5–10 minutes. Heat a non-stick skillet over medium heat. Scoop about ¼ cup of batter per pancake onto the skillet. Cook for 3–4 minutes, until edges begin to brown. Flip and cook for another 3–4 minutes. Repeat until all batter is used. Serve topped with fruit or compote.
