KATHIYAWADI KHICHDI CHEF AANAL KOTAK PREP TIME: 10-12 mins COOKING TIME: 20-25 mins INGREDIENTS: FOR KHICHDI MASALA: • 5 nos. bay leaf • 2 inch cinnamon stick • 2 nos. star anise • 1 tbsp cloves • 1 tbsp black peppercorns • 1 tbsp coriander seeds • 1 tbsp cumin seeds • 1 tbsp fennel seeds • 5-6 pods green cardamon • 3 nos. black cardamon • ½ nutmeg (grated) • 1 tbsp red chilli powder • ½ tsp turmeric powder • Salt as per taste FOR KHICHDI: • 3 cup water • 1 ½ tsp salt • ½ tsp turmeric powder • 1 tbsp ghee • ½ cup toor dal (soaked for 2 hours) • ¼ cup green moong dal (split) (soaked for 30 minutes) • 1 cup basmati rice (washed) • 1 nos. potato (cube) • 1 nos. carrot (cube) • ¼ cup peanuts (soaked for 2 hours) FOR GARLIC PASTE: • 10-12 nos. garlic • 2 tbsp red chilli powder • 1 tsp amchur powder • ½ tsp black salt FOR MAKING KATHIYAWADI KHICHDI: • 1 tbsp ghee • 1 tbsp cumin seeds • ½ tsp hing (asafoetida) • 8-9 nos. cloves • 1 nos. cinnamon stick • 2 nos. whole red chilli • 1 nos. bay leaf • 1 nos onion (chopped) • 2 nos. green chilli (chopped) • 1 tbsp ginger (grated) • 2 tbsp prepared garlic paste • 1 tbsp coriander powder • 1 tbsp cumin powder • 2 tbsp spring onion (chopped) • 2 nos. tomato (chopped) • 1 tsp turmeric powder • 1 tbsp garam masala • 2 tbsp kichadi masala • Salt as per taste • ¼ cup water • ¼ cup green peas (boiled) • Spring onion (for garnish) • Ghee (for garnish) • Live charcoal (to give smoky flavour) METHOD: FOR KHICHDI MASALA: • First in a pan dry roast bay leaf, cinnamon stick, star anise, nutmeg, cloves, black peppercorns, coriander seeds, cumin seeds, fennel seeds, green cardamon, black cardamon. • Roast the spices on low flame for 5-7 minutes. • Further transfer the roasted spices on a plate and cool down on room temperature. • Transfer the spices in to mixer jar along with red chilli powder, turmeric powder and salt as per taste. • Grind the spices into a fine powder and keep it aside. FOR KHICHDI: • In a cooker add water, salt as per taste, turmeric powder, ghee, toor dal, green moong dal, rice, potato, carrot, and peanuts. • Mix this, cover the lid and pressure cook it for 2 whistles. FOR GARLIC PASTE: • Now in a mortar pestle crush garlic, and red chilli powder. Keep this aside for further use. FOR KATHIYAWADI KHICHDI: • Now take a pan add ghee, cumin seeds, hing, cloves, cinnamon stick, whole red chilli, bay leaf, and onion. Saute this properly. • Further add green chillies, ginger, and prepared garlic paste. Saute this nicely. • Add in coriander powder, cumin powder, spring onion, tomatoes, turmeric powder, garam masala, kichadi masala, salt as per taste, add water.Mix & cover the lid and cook it. • Further add water, pressure-cooked khichdi, boiled green peas, at last add in water again to adjust the consistency. • Further, smoke the dish with live charcoal at time of serving. • Garnish it with spring onion and ghee.
