#ginger #cake #baking Hi lovely people, My Granny’s Parkin recipe. I hope you make it, it’s a delicious, moist and sticky cake that everyone can enjoy, on its own, or with custard. Thank you as always for watching, and if you enjoy the video, please give me a thumbs up, or leave me a comment. Love as always, Lynn ❤️ @nanna-m Email….iammrsmtv@gmail.com 175 grams of unsalted butter 175 grams of dark brown sugar 175 grams of treacle 250 grams plain flour 200mls milk 2 large eggs at room temperature 1.5 tsp bicarbonate of soda 2 tsp ground ginger Optional 1/2 teasp mixed spice Preheat oven to 180’c/ fan 160’c or gas 4 Grease and line 8” round tin or tin of choice Melt butter, treacle and brown sugar in a saucepan on low heat. Once melted add milk and set aside to cool to room temperature. Beat eggs. Sieve flour, bicarbonate and ginger into a bowl. Once cooled add beaten egg to treacle, butter, sugar and milk mixture, mix till combined. Make a well in the flour mixture, and add the ingredients from your pan. Mix till there are no lumps left and mixture is smooth. Pour mixture into tin, place in the centre of the oven, bake for approx 50 mins, do not open the oven door or the cake will collapse. After approx 50 mins, test the cake with a skewer, if it comes out clean, take the cake out of the oven, if not bake for 5 min intervals, testing till skewer comes out clean. Leave to cool, remove from the tin, cover with cling film, and leave for at least 24 hrs, up to 1 week to allow the cake to develop a sticky texture. Enjoy 🤗
