Spray a donut pan with non-stick spray. Set aside. Make the Donuts: Whisk together the flour, baking powder, baking soda, and nutmeg together in a medium-sized bowl. In a separate medium-sized bowl, whisk the egg, brown sugar, milk, and yogurt together until smooth. Add the melted butter and vanilla extract, whisking until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. DO NOT OVERMIX. Spoon the batter into the donut cavities of the pan. The batter should reach about 2/3 up the donut cavities. The donuts will rise in the pan. Bake for 9-10 minutes or until the donuts are golden-brown. Remove from the pan and continue baking the remaining batter. There should be enough batter for a dozen donuts. Making the Chocolate Glaze: Place the chocolate chips, butter, light corn syrup, and water in a medium sized bowl. Melt in 20-second increments in the microwave, stirring after each time, until completely melted and smooth. It normally takes 2-3 rounds for me. Dip the tops of the donuts into the chocolate and serve!
