This dish combines tradition and creativity, perfect for family gatherings or as an expression of culinary depth. Step 1: Gather Your Ingredients Main Ingredients: 1 whole goose 5 green onions Several slices of ginger Smoked Ingredients: 125g sugar (1/2 cup) 75g white rice (1/3 cup) 30g tea leaves (recommended Earl Grey tea or black tea) Step 2: Boil the Goose Place the whole goose, green onions, and ginger into a pot with cold water, ensuring the water covers the goose completely. Bring the water to a boil, then lower the heat and simmer for 15 minutes. Cover and let it rest for another 25 minutes. Remove the goose from the pot. The remaining broth can be used as a base for noodles, soups, or other dishes. Step 3: Season the Goose While the goose is still warm, rub an even amount of salt over its entire body. This step will enhance the flavors for the upcoming smoking process. Step 4: Prepare the Smoking Mixture Combine the sugar, white rice, and tea leaves on a piece of aluminum foil to create the smoking base.
