This is a short video of how I clean my surf perch after I catch them. I'll show you how I fillet these fish - there are many methods, but this is what I do. Surf perch is usually a dry meat fish, not oily like say salmon. But you can still smoke it. I have a small portable smoker, and it makes it really easy to smoke these fish.
