Spicy Minced Beef Stir-fry (with Vegetables, SUPER TASTY!)

This recipe is a versatile menu for dinner when you don't have much time but craving for something tasty and comforting. Add this recipe to your meal prep meals for the week with rice, noodles, or even roasted sweet potatoes! It keeps you full and a great source of protein and vegetables! Note: The vegetables in the ingredients list, can be substituted with any vegetables you have in your fridge (snap peas, eggplant, zucchini etc, brocollini, etc.) Ingredients: Minced beef Garlic Onion Spring onion Carrots Capsicum/Bell peppers Bean Sprouts Brown sugar Salt (to taste) Black Pepper (to taste) Sesame oil Olive oil/any cooking oil Optional ingredients: Sesame seed Chillies Marinade: Soysauce sesame oil Apple cider vinegar/Rice vinegar **Refer to video for ingredient measurements Instructions: Dice garlic, onion, spring onion, chilli, carrots, capsicum Heat pan under medium heat with 1tbsp of oil. Make sure it does not over heat Add diced garlic, onion, spring onion, chilli, let it sweat (refer to video) Add carrots to allow it to cook until tender, then add capsicum Bring to low - medium heat Add brown sugar and extra salt (if you prefer). Then mix for 1-2 minutes Add bean sprouts and allow to cook for another 5-7 minutes. The longer you cook the softer the vegetables will be Turn off heat Garnish with extra spring onions and sesame seeds Enjoy!
