Prepared with a variety of vegetables like potatoes, brinjal, carrots, cabbage, green peas, valor beans, and fenugreek dumplings, this dish delivers a true restaurant-style taste at home. Perfect for winter meals, festivals, family gatherings, and anyone who loves traditional Indian vegetarian food. Serve hot with puri, roti, paratha, or rice. -------------------------------------------------- 🧄 INGREDIENTS: -------------------------------------------------- Oil – 1 cup Mustard seeds – 1 tsp Cumin seeds – 1 tsp Whole spices (bay leaf, dried red chili, cloves, cinnamon) – few Curry leaves – few Chopped ginger – 1 tsp Asafoetida (hing) – 1/4 tsp Chopped green garlic – 1/2 cup Chopped onion – 1 cup Green chilies – 2 (chopped) Chopped tomatoes – 1 cup Suran (elephant foot yam) – 1/2 cup Brinjal (eggplant) – 1/2 cup Potatoes – 1 cup (chopped) Green peas – 1/2 cup Pigeon peas (tuvar dana) – 1/4 cup Cauliflower – 1 cup (chopped) Cabbage – 2 cups (chopped) Carrots – 2 cups (chopped) Valor / Hyacinth beans – 2 cups Red chili powder – 4 tsp Coriander powder – 4 tsp Turmeric powder – 1 tsp Sugar – 1 tsp Salt – to taste Garam masala – 1/4 tsp Besan or fenugreek dumplings – as needed Water – 1 cup -------------------------------------------------- 🍲 METHOD: -------------------------------------------------- 1. Heat oil in a large pressure cooker or deep pan. 2. Add mustard seeds, cumin seeds, and whole spices. Sauté until aromatic. 3. Add curry leaves, chopped ginger, and asafoetida. Mix well. 4. Add green garlic and onions. Cook until soft. 5. Add green chilies and tomatoes. Cook until oil separates. 6. Add all vegetables and mix thoroughly. 7. Add red chili powder, coriander powder, turmeric, sugar, salt, and garam masala. Mix well. 8. Add besan or fenugreek dumplings and mix gently. 9. Add 1 cup water and stir. 10. Pressure cook for 2 whistles on medium flame. 11. Open lid and cook uncovered for 5 minutes. 12.
