On the menu today is one of my absolute FAVS: Hidden-Veggie Butternut Squash Mac & Cheese Ingredients you'll need: -1 bag pasta (I love Banza) -1 lb butternut squash fresh or frozen, cubed -1 head, or 10-16 oz cauliflower, chopped -1 can coconut milk, 15 oz (if following DASH diet or limiting cholesterol, can do 2% milk, or low fat milk alternative) -1 can cannellini beans, 15 oz -1/4 cup nutritional yeast -1 tsp paprika -1/4 tsp cayenne -1/8 tsp nutmeg -1 tsp turmeric -Sprinkle salt and pepper to taste Follow along for the steps to make this easy, super healthy dish, and to hear about all the benefits!
