Lemon Rosemary Cookies (adapted from GLAD Rosemary Citrus Cookies) ½ cup cornmeal 2/3 cup flour pinch of salt 1 stick unsalted butter, softened ½ cup sugar 1 egg ½ tsp. vanilla extract 2 Tbsp. fresh rosemary, finely chopped 1 Tbsp. grated lemon zest (I kept saying 2 in the video, but 1 is plenty!) 1 Tbsp. fresh lemon juice (about ½ a lemon) Preheat oven to 350 degrees. Whisk together the cornmeal, flour and salt. Cream together the butter and sugar. Beat in egg and vanilla extract. Add lemon zest, lemon juice, and rosemary then mix to incorporate. Add the flour mixture and mix to combine. Using a 1 Tbsp. cookie scoop, place cookies onto parchment lined cookie sheets about 2 inches apart. Bake for 15 minutes until lightly golden around the edges. (I forgot to swap the cookie trays halfway through the baking process, but that would yield the best results!)
