For the yeast dough, that should be prepared one day in advance, you will need the following ingredients: 7.5 gr. of baker's yeast 100 gr. of flour 60 gr. of water 375 gr. of lard 375 gr. of margarine 400 gr. of sugar 960 gr. of cane sugar honey (MOLASSES) Bring these ingredients to a slowly heat until melted and add the following ingredients. 800 gr. of fine flour 24 gr. of ground cinnamon 4 gr. of clove powder 6 gr.of fennel powder 3 gr. of baking soda 10 gr. of powdered nutmeg 100 gr. of raisins 800 gr. of chopped candied fruit ½ of lemon zest ½ of orange zest Add all the ingredients and mix them well, then let it rest for 3 days at room temperature. Afterwards, place the dough in a refrigerator for at least 24 hours before baking. Then you cook them in forms greased with fat for 60 minutes at a temperature of 160 degrees. Remove from the oven and let them cool. After being completely cold wrap the honey cakes in vegetable or film paper.
