Paneer Butter Masala. If you are looking for a whole lot of proteins that also satisfies your taste buds, what better than a bowl of hot served Paneer Butter Masala!! Paneer since ages has been known for its richness in protein and a huge alternative to meat (if you are vegetarian and always wondered how to fill that gap!). Especially if you have members in your family who are either gym going, diabetic or with increased blood pressure? Well, paneer is your go to option. Before we start, make sure you have all the ingredient’s ready so you do not have to run to the store last minute. PANEER BUTTER MASALA Here is your checklist: -Butter -Sunflower/Vegetable oil -Cardamom -Cloves -Cinnamon -Ginger -Garlic -Onion -Tomato -Cashew Nuts -Turmeric powder -Kasuri Methi -Garam Masala -Coriander leaves -Fresh Cream -Coriander powder -Sugar PREPARATION TIME: 10 minutes COOKING TIME : 30 minutes Without further delay, let’s get started - • In a saucepan, add 1tbsp of butter and 1tbsp of sunflower oil and let them heat for a while. • To this, add 2 cardamon, 3 cloves and 1 ½ inch cinnamon. • Sauté them patiently. • To enhance flavour and aroma, add 1inch of ginger and 5 cloves of garlic. • Then, we go on to add the key ingredient of the gravy - Add 1 neatly sliced onions into the pan and sauté in medium flame until they turn transparent. (Not to forget, the onions bring natural sweetness to the recipe by removing the tang from tomatoes.) • To this, add 2 red ripe tomatoes to add a slight tang and bring colour in your gravy. • To add a milky flavour and a mild sweetener, add 10 cashew nuts to the recipe. It makes the gravy thick and adds texture. You could also replace it with peeled almonds as per preference and availability in your kitchen. • Now, sauté and cook the mixture in medium flame until it’s soft and mushy. • Make a pure blend of this mixture using your blender to get a classic smooth gravy. • On the other hand, Add butter- 2tbsp, turmeric powder – 1pinch, chilli powder – 1pinch and coriander powder- 1tbs in a saucepan and sauté. • To this, add the readily kept mixture and cook for 2-4 minutes in medium flame. • Don’t forget to add salt as per taste and mix well. • Add 1 ½ cup of water to this mixture and let it boil. • Now, add sugar – ¾ tsp to get a slight flavour of sweetness and keep stirring. • By now, you must notice that the gravy is almost getting done. • To this add 200gms of paneer and cook for 3-4 minutes. • For the final touch – Add Kasuri methi – 1tbsp, Garam masala- ¾ tsp, Coriander leaves and some fresh cream. • By now the aroma of the dish must have dragged your family into the kitchen.
