Ready for some delicious Turkish soft bagels? From chocolate-filled to olive-studded or just a classic plain, these fluffy breads are a taste of Turkish comfort in every bite. Easy to make and even easier to love, these amazing pastries are waiting for you! AÇMA 1 cup lukewarm water,250 ml 1 tablespoon yeast 3 tablespoons sugar 500 g flour (about 3 cups and 2 tablespoons) 1 teaspoon salt 5 tablespoons olive oil 2 tablespoons butter Egg yolk (for egg wash) Black cumin seeds (for topping) Fillings Olive paste black Olives Chocolate spread In a bowl, mix lukewarm water with yeast and sugar. Stir the mixture well and let it sit for 1-2 minutes. This will activate the yeast and make the dough rise faster. In a large mixing bowl, sift flour and add salt. Stir the dry ingredients together and make a well in the center. Pour the yeast mixture into the well, along with olive oil and butter (cut into small pieces for easier kneading). Using a spatula, start mixing everything together until all the flour is moistened. Transfer the dough onto a lightly floured surface and knead it for about 10 minutes until it becomes smooth and elastic. The dough should be slightly stiff but will soften after rising. Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise for about 1 hour, or until it doubles in size. Once the dough has risen, punch it down and divide it into 8 equal portions. Do not shape them into balls to prevent them from becoming too tight and hard to roll. For Plain Açma, take one portion of dough and roll it out into a 25 cm strip. Twist the ends in opposite directions, then shape it into a circle, pinching the ends together. For Olive-Filled Açma, roll out one piece of dough, spread olive paste and black olives down the center, and fold the dough over the filling, sealing the edges. Twist the ends as with the plain açma. For Chocolate Açma, follow the same method as the olive açma but use chocolate spread as the filling. Place the shaped açma on a lined baking tray, cover with a damp cloth, and let them rise for another 20 minutes. Preheat the oven to 200°C (390°F). Mix egg yolk with a tablespoon of water and brush it over the açma. Sprinkle black cumin seeds on the plain and olive açma, and almonds or other toppings for the chocolate version.
