This Red Chicken Curry Never Disappoints Ingredients • chicken, cut into pieces • 1 stock cube • a little warm water • cooking oil • ¼ teaspoon garlic & ginger oil (optional) • 1 onion, blended smooth • 60 g red curry paste • 500 ml full-fat coconut milk • ½ teaspoon fish sauce • ½ tablespoon fish sauce • ½ teaspoon shrimp paste • lemongrass (to taste) • kaffir lime leaves (plus extra for garnish) • about 100 ml water • bamboo shoots (optional) • chopped onions or vegetables of choice • 2 teaspoons sugar • salt (optional) Method 1. Season the chicken • dissolve the stock cube in a little warm water • pour over the chicken • add garlic & ginger oil (optional) • mix well 2. Part-cook the chicken • heat oil in a pan • cook the chicken until about 30% cooked • remove and set aside 3. Make the curry base • heat oil in a wok • add the blended onion • cook until soft, fragrant, and slightly sweet 4. Add the curry paste • add the red curry paste • stir and cook briefly to release the aroma 5. Add coconut milk & seasoning • pour in the coconut milk • add fish sauce, shrimp paste, lemongrass, and kaffir lime leaves • cook for 2–3 minutes, stirring gently 6. Return the chicken • add the partially cooked chicken back to the pot • add about 100 ml water • cook for 10–12 minutes 7. Add vegetables • add bamboo shoots and onions (or vegetables of choice) • add 2 teaspoons sugar • cook for another 4 minutes 8.
