Every time I went to New York when my sister lived there, I made an effort to get to Levain Bakery but never made it😩😩 so naturally I had to make a vegan version that I can enjoy NOW!! This recipe was inspired by Modern Honey You’ll need: 8 tbsp cold vegan butter 3/4 cup dark brown sugar 1 chia eggs 3/4 cup cake flour 3/4 cup ap flour 1/2 tsp cornstarch 1/2 tsp baking soda 1/2 tsp salt 1 cup chocolate chips 1/4 cup chopped pb cups Here’s how: 1. Preheat oven to 400°F. 2. In a mixing bowl, beat together cold cubed butter and brown sugar for 4 minutes. (Use soft brown sugar unlike me lol) 4. Add chia egg and beat in until smoothly combined. 6. Stir in flours, cornstarch, baking soda, and salt. Mix until combined. 7. Stir in chocolate chips and pb cups. 8. Measure out about 6oz of dough and roll into a ball. Place on lined baking sheet. This recipe makes about 6 cookies! 9. Bake for 12 minutes maximum - you want a golden outside and a really soft chewy almost doughy inside.
