Half classic. Half bold. Red velvet and double chocolate bring all the drama. Bakery-style cookies that bake up big, gooey, and unforgettable. Ingredients For the base dough: • 1 cup (227g) unsalted butter, softened • ½ cup (100g) brown sugar • ¾ cup (150g) granulated sugar • 2 large eggs • 2 tsp vanilla extract • 1¾ cups (220g) all-purpose flour • 1 cup (120g) cake flour • 1 tsp baking soda • 2 tsp cornstarch • ½ tsp salt • chocolates for topping (optional) Classic Add-ins • 200 g semi-sweet chocolate chunks • 80 g chopped store-bought chocolate chip cookies Red Velvet Add-ins • 1–2 tsp cocoa powder • 1 tsp red gel food coloring • ½ tsp vinegar • 100 g chopped white chocolate • 5 cookies & cream sandwich cookies, chopped Double Chocolate Add-ins • ¼ cup cocoa powder • 1 tsp milk • 100 g semi-sweet chocolate chunks • 5 Oreo cookies, chopped Instructions 1. Make the Base Dough• Cream butter with brown and white sugars until fluffy. • Add eggs and vanilla, and mix until smooth. • Add flours, baking soda, cornstarch, and salt. Mix into the butter mixture. 2. Divide the Dough • Weigh out 936 g dough total. • Split into:• 468g for Classic • 234g for Red Velvet • 234g for Double Chocolate 3. Mix in Flavor Add-ins • Classic: stir in chocolate chunks and chopped store-bought cookies. • Red Velvet: mix in cocoa powder, red food coloring, vinegar, white chocolate, and chopped white sandwich cookies. • Double Chocolate: mix in cocoa powder, milk, chocolate chunks, and chopped Oreo cookies. 4. Divide and Combine Dough Balls• Split red velvet and double chocolate flavour dough into halves (you'll have 2 portions of each). • Split classic dough into 4 portions. Pair one half Classic + one half Red Velvet → form 4 combined dough balls. • Pair one half Classic + one half Double Chocolate → form 4 more dough balls. • Gently press the two halves together into one large dough ball per cookie. 5. Chill dough balls in the freezer for 30 minutes to help control spreading. 6. Bake • Preheat oven to 400°F. • Place dough balls on a silicone baking mat or a tray lined with double parchment. • Bake for 15 minutes on top rack, or until edges are golden and centers are soft. NOTE: If your cookies are coming out a bit raw, try baking them for 2 more minutes or broil them for 1–2 minutes at the end to finish them off. Every oven’s a little different! For smaller cookies, reduce the oven temp slightly and bake for less time. 7. Let cool slightly before transferring to a wire rack and decorate with chocolate.
