Wash and dry fresh strawberries. Make sure there is no water on the strawberries or the chocolate will seize up and ruin the smooth consistency of the chocolate. Melt chocolate (chips or bar) in a glass bowl over a pot of simmering water or double boiler (Make sure the bottom of the bowl doesn't touch the simmering water. You just want the heat of the steam to melt the chocolate, so it doesn't get too hot and burn!). You can alternatively use the microwave according to directions on package. Some packages of chocolate chips will also provide direction for melting the chocolate specifically for fruit dipping. If not, I like to add about a tablespoon of vegetable shortening per every cup of chocolate chips to get a really velvety smooth and thin consistency, perfect for dipping. I usually use semi-sweet chocolate for my berries, but you can use candy melts, white chocolate, milk chocolate, dark chocolate or even add flavoring oils to your melted chocolate! Pour chocolate into a deep mug, cup or small bowl. Hold the strawberries at the leaves and dip into melted chocolate until it is fully coated. If there isn't a lot of leaf on top to hold on to, you can always stick a toothpick on top, to create a little handle to hold on to along with whatever leaf is attached to the berry. Pull straight up and out of the chocolate. Use your free hand to tap the wrist of the hand holding the strawberry to help the excess chocolate slide off of the tip of the strawberry and back into your cup. Place dipped strawberries onto wax paper for easy removal once dried. DECORATE: Place candies or sprinkles onto wet chocolate. Place on wax paper and refrigerate to dry and set chocolate. CLASSIC DRIZZLE: Let strawberries dry (speed up the process by placing in the fridge or freezer for a few minutes) and add a drizzle of white chocolate on top by using a plastic bag filled with melted chocolate. Snip off a tiny tiny piece from the corner of the bag and gently squeeze on to dried dipped berries, moving your hand from side to side in a quick and steady motion. ROLL IN TOPPINGS: Immediately roll berries in a bowl of chopped nuts, cookie crumbles, coconut shreds, sprinkles, etc., while the chocolate is still wet Place on wax paper and refrigerate to dry and set chocolate.
