Recipe: For the Salsa you will need: 2 poblano peppers 24 tomatillos (approx 2 lbs) 6 Jalapenos 6 Serranos 7 Cloves of garlic 1/2 med White Onion 2 TBS of Salt 1/2 a bunch of Cilantro Roast the poblanos and remove the skin In a large pot add all the remaining ingredients (except for the salt and cilantro) and cover with water. Bring to a boil and boil until the peppers and tomatillos start to split. When the tomatillos turn a pale green color they are done. Pull off fire and allow to cool. Put all ingredients into a blender and blend until smooth. At this time add salt to taste and the cilantro. Add chili water to the salsa until you get the consistency you like. You may have to blend in multiple batches. This salsa recipe will make enough for the Chili Verde and give you some salsa to enjoy in other ways. If you wish to only make enough for the Chili Verde, simply cut the recipe in half. For the rest you will need: 2 lbs. of your choice of pork cubed in roughly one-inch pieces Salt Pepper Chicken Broth Cooking oil 1 tbs of Cumin 1 tsp Mexican Oregano Potatoes (optional) Add a couple tbs of your choice of cooking oil to a heated pan. Brown pork until all the liquid is cooked down and only a little bit of the original oil is left. Season with salt and pepper to your liking. Once done add chicken broth to cover the pork. Continue to simmer and stir for approximately one hour. Adding more broth as needed as it cooks down. Add the Cumin and Oregano. Mix together well to distribute the seasoning. Add about half of the Verde Salsa that you made. Simmer for another hour until it is a nice gravy consistency. If you are going to add the potatoes, then they would go in about 30 min after adding the salsa to allow them to cook and soften. When the Chili Verde has cooked down to your liking remove from heat. Serve and enjoy!! Tips: Potatoes help tame down the spiciness of the Chili if it's too spicy for your liking. You can also cut down the number of peppers in the Salsa to control the spiciness level. Serve on Tortillas for excellent tacos or burritos. This recipe works well inside on your cooktop as well.
