As you can see in the video, I started with an organic-sounding piano. The takeaway from this video is two big things. 1. Authenticity & 2. Processing (which is also a form of authenticity) Whenever you listen to a sample from the 70s or 80s. You can hear the sound of the year within the music. The processing, the instruments used, and the microphone recording style all go into it, along with the instrumentation arrangement. You should even try out-of-the-box techniques like I did when using Elastique Pitch at 3:14. I froze the sample time and recorded that, giving myself a granular b-part of the sample (which I love doing). Just trying stuff is a big part of how I make music. So, when making vintage samples, it's not complexity but authenticity. How raw does it sound? Did you use the same VST emulation as the real gear they used? How were pianos & guitars processed back in this time period?
