INGREDIENTS 300 g (1 ½ cups) cooked rice; 3 medium potatoes, boiled, peeled; 1 onion, chopped; 1 carrot, grated; 45 ml (3 tbsp) vegetable oil; 2 garlic cloves, minced; 5 g (2 tbsp) parsley, chopped; 2 eggs; 200 ml (¾ cup) buttermilk; ½ tsp baking soda; 150 g (1 cup) all-purpose flour; salt and pepper. METHOD Start with heating up vegetable oil over medium heat. Cook carrots and onions for 10 minutes. MIx cooked vegetables with rice and mashed potatoes, add garlic and parsley. Mix to combine and form patties. Whisk eggs with buttermilk, salt, pepper, flour and baking soda. Use a fork to dip patties into the batter.
