Eggnog Bundt Cake Recipe - For the festive baking season, we're going to explore how to cook with eggnog. Eggnog can be used in all sorts of holiday baking ideas. Ingredients for the cake: 250 mL (1 cup) butter 310 mL (1¼ cup) granulated sugar 4 large eggs 10 mL (2 tsp) pure vanilla extract 310 mL (1¼ cup) eggnog 45 mL (3 Tbsp) rum 500 mL (2 cups) all-purpose flour 10 mL (2 tsp) baking powder For the glaze: 250 mL (1 cup) icing sugar 30 mL (2 Tbsp) butter, melted 60 mL (¼ cup) eggnog, approx Method: Preheat oven to 180ºC (350ºF); grease and flour a bundt pan.Cream together the butter and sugar. Cream in the eggs. Combine flour and baking powder. Mix together the egg nog, rum, and vanilla. With the mixer on low speed, alternate adding the the eggnog mixture and the flour mixture. 3-4 additions, until just combined.
