These cozy, comforting recipes are simple, satisfying, and perfect for busy days when you want something hearty and homemade on the table. Casseroles have a special place in many of our kitchens because they’re reliable, family-friendly, and easy to prepare ahead of time. These are the kind of meals you’ll find yourself coming back to again and again. I hope these recipes bring a little extra warmth and comfort to your kitchen. TATER TOT CASSEROLE •1 lb. ground beef •1/2 cup milk •1 onion, chopped •1 tsp salt •1 bag tater tots •cheese slices •frozen mixed veggies •1 can cream of mushroom soup Brown ground beef in a frying pan. Add onions and cook until translucent. Spread on the bottom of a greased 9 by 13 casserole dish. Add a layer of warmed frozen veggies. Mix soup with milk and pour over top of casserole. Top with cheese slices, then tater tops. Place in a preheated 375 degrees oven for 45 minutes. Cool slightly before cutting and serving. SHEPHERD’S PIE •1lb. ground beef •1 can tomato soup •1 onion, diced •salt & pepper •5-6 large potatoes •1/4c. butter •1 bag frozen mixed veggies •milk for potatoes •paprika Brown ground beef and onion in a medium frying pan. Add veggies and soup. Pour in the bottom of a greased 9 by 13 casserole. Boil diced & peeled potatoes until fork tender. Mash using butter and enough milk to make a spreadable consistency. Spread over beef mixture and top with paprika. Bake for 35 minutes or until bubbly and golden. CHICKEN DIVAN •2 pkg frozen broccoli •3 chicken breasts, cooked •2 cans cream of chicken soup •1c. mayo •1st p curry powder •1/4 cup lemon juice •Swiss cheese slices •3/4 cup bread crumbs •2 tbsp butter Bake chicken breasts in the oven for 45 minutes. Remove from oven and slice. Or use rotisserie chicken, meat removed and cut up. Cook broccoli briefly in boiling water, drain and place in an even layer in a 9 by 13 casserole. Place chicken over top. Mix together soup, mayo, curry powder and lemon juice. Pour over chicken and broccoli. Top with Swiss cheese slices. Mix bread crumbs in melted butter. Spread over top of cheese. Bake at 375 degrees for 35-40 minutes, until topping is golden and cheese is melted.
