In a bowl, add the peanuts and add salt, Kashmiri chilli powder, cumin powder, asafoetida, ginger garlic paste and mix it well. 2. Now add 1 tbsp of water too, just enough to wet the peanuts. Add besan and rice flour and mix it well to coat evenly and sprinkle water as required. 3. Heat oil over medium flame. 4. Separate the peanuts and drop them into the oil and fry until it turns crispy and golden brown. 5. Now remove it from the oil. 6. Fry the curry leaves in the same oil and remove it as soon as it gets crispy, which will only take a few seconds. 7. Set this aside. 8. In a small bowl, combine together all the ingredients for the spice mix. 9. Now add the fried curry leaves and mix it well until evenly combined. Add this to the fried peanuts and toss. 10. Store in an airtight container for up to 2 weeks. Cooking Tip: Don’t mix the masala and the peanuts too much, as it can cause the peanuts to come off and stick to your fingers.
