Cajun BBQ Chicken Cooked On The Weber Pulse 2000 Electric BBQ

Elevate plain grilled chicken with this mixture of BBQ and Caribbean style spices; it just takes a little more work but the taste is phenomenal and well worth the effort. You will need a skillet or griddle pan. Season the chicken well and cook in a little cold-pressed rapeseed oil in the griddle until each side is golden brown. We cooked this dish on the Weber Pulse 2000 electric BBQ with one side on a high heat and the other on a lower more indirect heat. Place the griddle over the direct heat and once the chicken breasts have browned take them out of the griddle and place over the indirect heat area. Make the sauce in the griddle then replace the chicken into the sauce to finish cooking until the core temperature reaches the safe 75C (167F). Garnish with the sliced spring onions. This would be delicious served with grilled sweetcorn and rice or hasselback potatoes. The heat in the sauce was not over-powering so if you like your Cajun blazing hot then I would double the quantities of Cajun seasoning and chilli sauce.
