To fry onions or to make birista - • Add some salt to sliced onion, rub the salt to the onions and keep let it sit for 10 mins • then squeeze the water from the onions. • Now heat up oil for frying into a kadhai, once oil is medium hot, drop the onions, initially fry on high flame & stir, once you see onions are getting light golden in color, turn the flame to low and fry until they change the color to light brown. • Take them out onto a paper towel & allow them to cool down. To marinate chicken - • Wash the chicken well, take the washed chicken into a mixing bowl, to this add fresh curd, half the fried onion, slit green chilies, red chilly pw, turmeric, garam masala pw, salt, mint leaves, fresh coriander & all the whole spices. • Add some fried onion oil & mix well. • Keep it for marination minimum 30 mins maximum 2-3 hrs. How to make Biryani Rice - • Keep the water boiling into a large vessel, once water starts boiling add whole spices, salt, mint leaves & fresh coriander leaves, boil the water for a min • then add lemon juice, some ghee. • Now keep the gas flame high, and add soaked rice to the boiling water. • make sure while adding rice, water is boiling and flame is high, • stir once when you add water, boil the rice on high flame for 7-8 min or until rice cooks until 80% • Meanwhile, to a heavy bottom biryani pot add some ghee, marinated chicken. • Once the rice is cooked 80%, add rice onto the chicken Biryani Layering - add other ingredients shown •Cover the lid tight, turn the gas flame on, for first 2 mins keep the flame to low •Then heat up a flat tawa, keep the biryani pot on the tawa, turn the flame to low, and cook the biryani on low flame for 40-45 mins. •Once done, turn the flame off, keep the pot closed for 30 mins and then open the lid.
