I’m back with another food video! This week we’re making peach galettes! This is a super simple yet fun & delicious recipe! FOLLOW ME ON IG: Instagram.com/maddibragg Classic Pie Dough: 2 1/2 cups all purpose flour 2tsp sugar 1tsp kosher salt 2 1/2 sticks unsalted butter cut into 1inch cubes and chilled 1tbsp apple cider vinegar or white distilled vinegar 1/4cup ice water 1. Cube butter and chill 2. Whisk together all your dry ingredients 3. Add chilled butter to flour mixture and combine by pinching flour and butter together until no large chunks remain 4. Dump flour onto work surface then combine water & vinegar and drizzle over your flour mixture 5. Run your fingers through the dough until it is well combined Knead a few times until you are happy with the texture (it should be shaggy and not perfect looking) 6. Divide dough in half and pat each piece into a disk 7. Cover with plastic and chill for two hours This pie dough makes enough for 1 pie or two galettes & can be held in the fridge for 4 days or frozen for up to 1 month PREHEAT OVEN TO 400F For the Filling of 1 Galette: 1.5lbs of peaches 2tsp Cornstarch 1/3 cup sugar 1tsp kosher salt Zest & Juice of 1 lime 1tsp vanilla extract 1 egg to brush the crust & raw sugar to finish I also used mint! 1. Chop fruit (i prefer mine thin) 2. Measure and add all other ingredients 3. Toss to combine TO ASSEMBLE/BAKE: 1. Flour your surface & roll out your chilled dough into a circle like shape (it doesn't have to be perfect!) 2. Add your filling and fold over/pinch the dough to close 3. Bake at 400 for 50-65 minutes or until golden brown crust rotating halfway through! ENJOY! Like I stated in the video there are so many variations of this recipe! Switch out the fruit, use lemon instead of lime, add ginger, use an herb like rosemary or basil. The options are endless, HAVE FUN!!!
