This Chicken Dum Biryani is rich, aromatic, and packed with traditional Indian flavors. Made using the classic dum method, this recipe has two main parts: 1. Marinating the chicken for deep flavor 2. Layering and slow-cooking the biryani to perfection Follow along for a restaurant-style biryani you can easily make at home 🍗🍚 --- 🧄 *Part 1: Chicken Marinade* *Ingredients* 3 tsp Biryani masala 3 lbs chicken thighs (skinless) 1 tsp chilli powder 1 tsp turmeric powder 1 bunch coriander leaves 1 bunch mint leaves 4 green chillies *Preparation* 1. Grind coriander leaves, mint leaves, and green chillies into a fine paste. 2. In a large bowl, add chicken, biryani masala, chilli powder, turmeric powder, and the prepared green paste. 3. Mix everything well so the chicken is evenly coated. 4. Cover and marinate *overnight* (recommended) or for **at least 2 hours**. --- 🍚 *Part 2: Making the Biryani* *Ingredients* 2 lbs basmati rice 2 large onions (thinly sliced) 2 bay leaves 2 tsp garam masala 2 tsp ginger garlic paste Ghee (as needed) Salt & oil (for cooking rice) *Preparation* 1. Wash and soak basmati rice for 30 minutes. 2. Deep-fry the sliced onions until golden brown. Set aside. 3. Heat ghee in a pan, add bay leaves and one sliced onion. Sauté until soft. 4. Add marinated chicken and ginger garlic paste. 5. Add 1 tsp chilli powder and 2 tsp garam masala. 6. Cook the chicken for about *10 minutes* until partially done. --- 🔥 *Cooking the Rice* 1. Bring a large pot of water to a boil. 2. Add salt and a little oil. 3. Add soaked rice and cook until **75% done**. 4. Drain the water and keep the rice aside. --- 🍽️ *Dum Cooking (Final Step)* 1. Place a *tawa* on low flame. 2. Keep the biryani pot on top of the tawa (this prevents burning). 3. Layer rice, cooked chicken, and fried onions. 4. Seal the pot tightly with a lid. 5. Cook on **low flame for 20 minutes**.
