Merch: https://www.firetofork.net/shop The gear I use – https://www.firetofork.net/gear Patreon - / firetofork Second channel - / @harryfisher139 I’m most active on Instagram @firetofork I’m also on Facebook - / firetofork Recipe Serves 2 (4 for snacks) Ingredients: • 750g chicken wings • 2 cups cornflour • 1tsp baking powder • 1l neutral oil • Optional and recommended: coriander to garnish Marinade: • 1tbspn fish sauce • 1tsp garlic powder • 1 small chicken stock cube (half an OXO one) crushed • 1 tsp white pepper Sauce: • 3 tbspn fish sauce • 1 ½ tbspn sugar • Juice from 2 limes • 2 chillis sliced (optional) Directions: • Combine all the marinade ingredients in a bowl and coat the chicken wings in them for anywhere from 10min to 1hr • While they marinate, add the fish sauce and sugar in a pot and put it on medium heat for 5-10min stirring regularly until the sugar has dissolved. • Add the lime juice and chillis to the warm sauce. • Combine the cornflour and baking powder in a bowl and dredge the marinated chicken in it so it’s thoroughly covered. • Heat the oil in a wok or pot to around 130deg or until a piece of wood (like a chopstick) is barely bubbling, then drop half your chicken in at a time and fry for 10-15 min or until blonde. • Remove the chicken and rest it on some paper towel or a grill basket, then crank your heat up to get the oil to around 200deg or a vigorous simmer from the piece of wood, then do a final fry of the chicken to brown it up – around 2min. • Remove and add the sauce and coriander to serve.
