Baked Breaded Eggplant Slices

In this video, Judi demonstrates how to make baked breaded eggplant slices. They're delicious, but without all the extra oil from frying them. Enjoy! Baked Breaded Eggplant Slices Makes 4 to 6 Servings 1 medium eggplant* 1 egg, beaten 1 Tbsp water 1 cup Italian bread crumbs** Spray olive oil or other nonstick spray Preheat oven to 375°F. Peel and slice eggplant about 3/8” thick. If needed, re-move bitterness as directed below. Dip slices in a mixture of 1 beaten egg + 1 tablespoon water. Then coat the slices with Italian bread crumbs. Lay pre-pared slices on a parchment paper lined baking sheet. Spray slices with olive oil or other nonstick spray. Bake for 15 minutes. Remove pan from oven and turn the slices over. Bake another 15 minutes, or until fork tender. Turn oven to broil and cook for 1 to 2 minutes on each side to finish browning the slices. These may be served as they are or topped with your favorite tomato sauce and mozzarella and/or Parmesan cheese (see suggestion below). Serve immediately. *To prepare eggplant without bitterness: If it’s a large, mature eggplant, peel and slice the eggplant. Separate the slices on a tray or cutting board. Heavily salt both sides of the slices and let them rest at room temperature for 30 minutes to allow them to “sweat.” Thoroughly rinse them with water; drain well. If the eggplant is small, young, and fresh, it may not have developed the bitterness in the seeds yet. It should be usable without any special treatment. Variations: After eggplant slices are baked, top with a spoonful of my “Easy Tomato Sauce with Eggplant” (see my recipe), then sprinkle with a little shredded mozzarella cheese and grated Parmesan. Place back in the oven for 3 to 5 minutes to heat through. Serve. Yum! **Gluten-free option: Substitute the Italian bread crumbs with...1 cup cornmeal, 1 Tbsp dried parsley flakes, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp garlic granules, 1 tsp onion powder, 1/2 tsp salt, and 1/4 tsp black pepper. Combine all ingredients and use as above. Extra may be stored in a sealed container in the freezer.
