ഒരിക്കലെങ്കിലും കഴിച്ചുനോക്കണം ഇതുപോലൊരു ചിക്കൻ വിന്താലു 😋😋 🍗 Chicken Vindaloo Recipe. ✅ Ingredients 🔴 For Curry Paste Kashmiri Chilies – 8 total (4 with seeds + 4 deseeded) Black Peppercorns – 1 tsp Black Mustard Seeds – ½ tsp Cloves – 4 Green Cardamoms – 3 Cinnamon Stick – 1 inch piece Cumin Seeds – 1 tsp Coriander Seeds – 1 tsp Garlic – 7 cloves Ginger – 1 inch piece Turmeric Powder – ¼ tsp Red Wine Vinegar or regular – 3 tbsp Tomatoes – 2 medium 🟡 For Preparation Chicken (boneless thighs) – 500 g Oil – 3 tbsp Onion (finely diced) – 1 medium Water – 1 cup Sugar – 1 tsp (optional ) Salt – 1 tsp (adjust to taste) 👨🍳 Method (For 500 g Chicken) 1️⃣ Soak the Chilies Deseed 4 Kashmiri chilies and keep the remaining 4 whole. Place all chilies in a bowl and pour vinegar over them, ensuring they are fully submerged. Cover and soak overnight. 2️⃣ Grind Whole Spices Dry grind the following until fine: Peppercorns Mustard seeds Cloves Cardamoms Cinnamon Cumin seeds Coriander seeds 3️⃣ Add Fresh Ingredients Add to the grinder: Garlic Ginger Vinegar-soaked chilies Tomatoes Grind to a smooth, thick curry paste. 4️⃣ Marinate the Chicken Cut chicken thighs into halves and place in a bowl. Add: Half the curry paste Half the salt Mix well to coat. Drizzle a little oil, mix again, cover and marinate: ✔ Minimum 1 hour ✔ Best overnight in refrigerator Refrigerate the remaining paste separately. 5️⃣ Sauté Onion & Masala Heat oil in a heavy-bottom pot over medium-high heat. Add diced onions and sauté until deep golden and caramelized. Lower heat to medium and add: Remaining curry paste Turmeric powder Cook until oil separates. 6️⃣ Cook the Chicken Increase heat to medium-high and add marinated chicken. Sauté for 4–5 minutes. Lower heat and add: 1 cup water (rinse grinder jar & lid for extra flavour) Stir well, cover, and cook 10–15 minutes, stirring occasionally. 7️⃣ Balance the Flavour Remove lid, add sugar and remaining salt if required.
