Detailed Gawar Zanzanit Bhaji Recipe Ingredients 1 cup boiled gawar (cluster beans) 1 medium onion, chopped 1/2 cup tomato puree 1/3 tsp ajwain (carom seeds) 2–3 garlic cloves 1–2 inch ginger 2–3 green chilies 1 tsp turmeric powder 1 tsp red chili powder 1/2 tsp goda masala 1 tsp sesame seeds 2–3 tbsp peanuts 1/2 tsp mustard seeds 1/2 tsp hing (asafoetida) Salt to taste Water as needed Oil as needed Method Prepare the Masala Paste Heat oil in a pan and add peanuts. Roast well until crunchy. Add chopped onion and sauté until slightly soft. Add ginger, garlic, green chilies, and sesame seeds. Sauté for 2–5 minutes until aromatic. Switch off the flame, let it cool slightly, then grind into a fine paste using water. Prepare the Tempering Heat oil in a pan. Add mustard seeds and let them crackle. Add hing and ajwain, sauté briefly. Cook the Masala Add the prepared onion-peanut paste and sauté well until oil starts releasing. Add tomato puree and mix well. Add Spices Add turmeric powder, red chili powder, goda masala, and salt. Mix well and cook for 5–8 minutes on medium flame. Add Gawar Add boiled gawar and mix gently so the masala coats the vegetable evenly. Cook for another 3–4 minutes. Serve Hot Serve hot with chapati, bhakri, or steamed rice. Tips Boil gawar until just soft to retain texture. Adjust spice level as per taste. This bhaji tastes even better after resting for a few minutes.
