From Peru comes this Mildly hot productive chilli, the Aji Panca. This variety is very different, confusing, and elusive, the flower belongs to Capsicum Chinense, the pod shape and growing habit resembles Capsicum Baccatum, more confusing the taste comes from Capsicum Annuum (Pasilla Bajio); berry flavor and smokey overtones, If you like experimenting and learning about mysterious pepper varieties this one is the best to learn from and about. The Panca chili (or Ají Panca as it’s known in South America), the plants get to around 70cm I pots, very productive, with pods measuring 7-10cm. They start off green then turn to to a burgundy brown colour once ripe. It is the second most common pepper in Peru, and is grown near the coast. What’s it Like? How Hot is It? Really crunchy, get a bean/apple like flavour come through. VERY NICE, the flavour lasts for ages as could still taste it after the break, one of the nicest chillies that have tried flavour wise, loved it Heat wise, its pretty mild but a deep chinense like burn, it hits and then cruises along at that same level but goes for a fair while, it was still burning after the break, lower mid heat, nice all over burn that radiates all over the mouth. A great producer, that anyone could try/use, fantastic mild pepper with berry like sweetness and a slightly rich smokey flavor. Great for roasting, and also for making powders,The Ají Panca can be made into a paste or dried and minced to be used as a condiment. Mainly used in Peruvian cooking, the Panca is great for stews, sauces and fish dishes.
