Instructions: Prepare the Amla: Wash the Amla thoroughly under running water and dry them with a cloth. In a steamer, add water and place a stand or jaali Add the Amla and steam it for 10 to 15 minutes. Remove from heat and let allow the Amla to cool slightly. Slice the Amla: Once slightly cooled, slice the Amla into halves or quarters, removing the seeds. You can cut the amla in smaller pieces with knife so that it can be grinded well. Grinding the amla : Add the amla to the grinding jar once it is cooled and make a fine and smoothe lump free paste . In a kadai or pan add the amla paste with the sugar or khand , you can also use gur powder and mix it till the sugar will start to dissolve. Cook it for 10 minutes and now add corn flour slurry and stir it until the corn flour slurry is mixed well. Add the masala : Now add black salt, hing, amchoor powder, black pepper powder ,Ginger powder , cinnamon powder. Cook the Amla: Stir it until the mixture thickens and leaves the side of the pan. This may take 20- 30 minutes. When the mixture is slightly cooled transfer the mixtute to a plate and let it cool completly. Grease your plam with some ghee ,now take a potion from the mixture and make a small ball and arrange them in a plate. Spice Coating : In a bowl or plate add khandsari powder ,chaat masala ,amchoor powder ,roasted jeera powder ,black salt and salt and mix them well. Now add all the amla ball one by one to the sugar powder that we have pepared. Toss the Amla ball in the spice mixture to coat well. Store: Store the Amla candies in an airtight container. Tips: Adjust the sugar quantity according to your preference. For a tangier flavor, add a pinch of salt to the sugar syrup. You can experiment with different spice combinations for added flavor.
