The Valrhona Food Forward Festival world tour explores the gastronomic challenges of tomorrow and stepped by Milano to embody its warm and soft theme: A tribe called bread. While Italy is known for the quality of its pastas, while it harbors the finest wheat and rice in Europe, while its expertise in flour milling is among the best in the world; its bread, let's be honest, has always been pretty dreary. But change is on the horizon. Artisan flours, time, long rise, fermentation, regional distinctive character… taste. The whole bakery scene is being turned on its head. In an unprecedented mix and match of bakers, chefs and pâtissiers, all gathered around to reboot everything you might have taken for granted whenever bread comes to be the talk of the town. In Milan, we immersed ourselves in creative baking, working with pastry chefs, cooks and makers inspired by traditional skills and expertise. Each one of us strives to write a story that is both unique and appetizing. Gastronomic talents came together in teams to create a unique menu based on a theme that could number among the most important for the next 100 years. This unique event has featured an exclusive line-up of : chefs @viviana Varese from Viva restaurant, Daniele Lunghi & Simona Piccolini from NOVO Osteria, Nicola Bonora from Motelombroso, @federico Sisti from Frangente, @franco Ascari from l'Ecole Valrhona and finally the sommelier.
