Ingredients (for ¼ kg Bitter gourd) Fresh bitter gourd 4 tsp Chana dal 3 tsp Coriander seeds (Dhania) 3 tsp Cumin seeds (Jira) 3–4 dry red chilies ¼ cup groundnuts (Optional: Curry leaves & garlic) Method 1. *Prep Bitta gourd: Wash thoroughly, pat dry, then slice thinly. Toss with turmeric and salt, let it sit for a few minutes to release water. Squeeze out excess moisture. 2. *Roast Masala: In a pan, dry roast cumin seeds, coriander seeds, chana dal, and dry red chilies (add curry leaves if you like). Roast till fragrant. Cool and grind into a fine powder with salt. 3. *Fry Chips: Heat oil in a kadai. Fry the drained bitter gourd slices until golden brown and crisp. Remove and set aside. 4. Add Crunch: Fry groundnuts (and garlic, if using) in the same oil until golden. Drain. 5. Mix: Toss fried chips with roasted masala powder and fried groundnuts. Mix well.
