Ingredients: • 540 g (19 oz) Puff pastry • 400 g (14 oz) Frozen cherries • 60 g (2 oz) Sugar (for the cherries) • 2 tbsp (15 g / 0.5 oz) Starch (for the cherries) • 200 g (7 oz) Sour cream • 40 g (1.4 oz) Sugar (for the cream) • 2 egg whites (for the cream) • 2 tbsp (15 g / 0.5 oz) Starch (for the cream) • 2 egg yolks (for brushing) • 1/2 lemon Preparation: Dough: • Roll out the puff pastry, cut out a circle, and place it in a baking pan (diameter: 22.5 cm). • Cut a lattice from the remaining dough using a special rolling cutter. Cherries: • Thaw the cherries and heat them in a pot over medium heat. • Add sugar and starch, and mix well. • Bring to a boil, then reduce the heat and simmer for 5–7 minutes, until the mixture thickens. • Remove from heat and let it cool. Cream: • Beat the egg whites with sugar in a bowl until stiff peaks form. • In a separate bowl, mix sour cream and starch until smooth. • Gently fold the sour cream mixture into the egg whites and continue beating until the cream is smooth. Assembling the cake: • Place the cooled cherries on the dough. • Spread the cream evenly over the cherries. • Place the lattice of dough on top of the cake. Baking: • Brush the edges of the cake with egg yolk. • Bake in a preheated oven at 200°C (392°F) for 40-45 minutes, until the dough rises and turns golden brown. Serving: • Let the cake cool slightly before slicing. It can be served warm or cold.
