Hello, Today we will share an important recipe for the preparation of SMEN, The Moroccan aged butter. We use it in many Moroccan dishes, such as the Couscous, the prune tagine and many other dishes. The preparation is easy and we will need these ingredients : 1kg of salted butter, that we will leave in room temperature for at least three hours 1/2 litre of hot water with one TBSP of oregano , we filter the leaves after 10 min and we leave the infusion until it's room temperature. Salt Preparation as per the video. You can leave Smen for many years not only months, the more you leave it the better is, but you can start using it after three months.
