RECIPE: John Wayne Meatloaf Ingredients: 1 1/2 lbs ground beef 1 taco seasoning packet 1 1/2 cups Colby or cheddar cheese, shredded & divided 1/2 white onion, diced 1/2 green bell pepper, diced 2 eggs 3/4 cup Panko plain bread crumbs 1/2 cup water 2 tablespoons olive oil 4 oz jalapenos, divided (half of them diced) salt and pepper to taste 4 tablespoons ketchup Directions: 1.) Preheat the oven to 375 degrees. 2.) In a skillet, saute the onion and green bell peppers in the olive oil until slightly browned. Salt and pepper to taste. Remove from heat and set aside to cool. 3.) In a large mixing bowl, add the ground beef, eggs, 1 cup of cheese, bread crumbs, water, taco seasoning, diced jalapenos, and sauteed onions and peppers. Mix ingredients by hand until well combined. Shape into a loaf and transfer to a lined cookie sheet or pan. 4.) Brush the ketchup over the meatloaf. 5.) Bake uncovered for 35 minutes. Remove from the oven and top with remaining cheese and jalapenos. Return to the oven for an additional 25-30 minutes or until the cheese is melted and the meatloaf is thoroughly cooked. Allow to cool for several minutes before cutting. Enjoy!!
